Highland beef is 40% lower in fat than other beef and is lower in cholesterol than chicken, venison, codfish or buffalo (Commercial Testing Laboratory, Inc. in Colfax, WI.)

Fine dining restaurants and health conscientious people are steadily increasing their demand for the gourmet beef. Consumers are delighted with the lean, tender, flavorful meat with little or no waste. The British Royal family maintains a "fold" of Highland Cattle and it is their beef animal of choice -- a rare opportunity for commoners to eat like royalty!

Our meats are processed at an Ohio Department of Agriculture licensed and inspected facility where it is “dry aged.” Less than 1% of all beef is dry-aged. Dry-aged beef is an investment in time and money that few steak houses, and even fewer retailers, are willing to make due to the longer processing time although it results in more flavor and tenderness. We also have our steaks Vacuum sealed, which prevents freezer burn and extends the freshness of the food.

No Antibiotics are used - Cattle were not meant to eat a diet of grain alone. In crowded feedlots without hay or pasture, cattle must be medicated to ward off diseases as well as given antibiotics to treat “sub acute acidosis”. I love this saddle but it does not fit my new horse (this saddle will not work with a high withered horse) so no point in keeping it in my tack room.
