The Mai Tai ---------------------






The Mai Tai is one of the greatest cocktails of all time, and perhaps the best Tiki cocktail ! It was created by Trader Vic in 1944. There are many versions of this drink ranging from not bad to just plain awful. Which is the original ? The following quote comes from Wayne Curtis's And A Bottle of Rum. It puts the debate to rest.


" I was at the service bar in my Oakland Restaurant," he recalled in 1970. "I took down a bottle of 17 year-old-rum. It was J. Wray Nephew from Jamaica; surprisingly golden in in color, medium bodied, but with the rich pungent flavor particular to the Jamaican blends. The flavor of this great rum was not meant to overpowered with heavy additions of fruit juices and flavorings. I took a fresh lime, added some orange Curacao from Holland, a dash of Rock Candy Syrup, and a dollop of French Orgeat, for its subtle almond flavor. A generous amount of shaved ice and vigorous shaking by hand produced the marriage I was after. Half the lime shell went in for color [and] I stuck in a branch of fresh mint......"

The Recipe

1 ounce St. James hors d'age rum (specifically recommended by famous Tiki cocktial guru Jeff Berry)
1 ounce Appleton Estate V/X
1/2 ounce orange Curacao - Marie Brizard (specifically recommended by famous Tiki cocktial guru Jeff Berry)
1/4 ounce Orgeat syrup and 1/4 ounce Rock Candy syrup (simple syrup with a drop of vanilla flavor)
1 ounce Fresh lime juice
Crushed ice.

Combine ingredients with 3/4 cup of crushed ice. Shake 3 times. Pour into an old fashioned glass with half a spent lime shell. Garnish with a sprig of mint.

Alternate Recipe - Lighter version

1 ounce St. James hors d'age rum (specifically recommended by famous Tiki cocktial guru Jeff Berry)
1 ounce Appleton Estate V/X
1/2 ounce of ----------------------------orange Curacao, Orgeat syrup, and Lime Juice.
No simple syrup




Zombie Punch-----------------------





Thanks to Tiki cocktails guru Jeff Berry, we finally know what the original Zombie Punch is made of ! It has remained a secret for over seventy years, with perhaps hundreds of versions out there claiming to be the original. Some taste good, but nothing competes with the original. It is a culinary masterpeice. Don Beach kept this recipe a secret by using codes to represent different ingredients. The mystery ingredient that had everyone guessing was called Don's Mix which was a combination of Grapefruit juice and Cinnamon syrup.

You'll have to spend some time getting just the right ingredients as some are hard to find.

A word of caution! Drink only one!

3/4 ounce lime juice
1/2 ounce white grapefruit juice
1/4 ounce cinnamon syrup (see note)
1/2 ounce falernum (see note) available at Morrell Wine in NYC.
1 1/2 ounces dark Jamaican rum, such as Appleton Estate V/X
1 1/2 ounces gold rum, such as Cruzan 5-year-old
1 ounce 151-proof Lemon Hart Demerara rum (buy in Canada. Not available in USA)
Dash Angostura bitters
6 drops ( 1/8 teaspoon) Herbsaint or Pernod
1 teaspoon grenadine. Buy Stirrings Brand. Rose Grenadine is artificial.
3/4 cup crushed ice.


Put everything into a blender. Blend at high speed for 5 seconds. Pour into a highball glass and add ice cubes to fill. Decorate with sliced fruit or berries and a mint sprig.

This package does NOT include editing of the video, therefore you will receive the raw footage on a DVD (1 copy).

This Package offers coverage of your entire day beginning with the Bridal Preparation then the Ceremony and Reception. If your photographer decides to do a photo shoot in a third location (ie. a park) the photo shoot will also be covered at no additional cost. This package does NOT include editing of the video, therefore you will receive the raw footage on a DVD (1 Copies).
