This is one of the best introductory wine books on the market. I give it to anyone that I know that is interested in learning more about wine. I hope that they can use the information that they find here to graduate to Parker, or Clarke.
Zraly's style of writing is very easy to understand as well as fun to read. The book covers the main wine growing regions of the world, as well as the wines grown in each region, types of grapes, some interesting anecdotes and what wines to pair with what food. I truly think Zraly went the extra mile on this book to make sure that just about every question a beginner to wine might have is answered. After reading the book, every time you walk down the wine aisle of your local grocery shop, you will have a very good grasp of the endless brands, and types of wines that are available today. I was truly impressed by the information in this book and the way it was presented. I strongly recommend this book to anyone that wants to learn about this wonderful subject. If the book worth 3 times as much, I would still say it's a bargain considering how much restaurant wine courses cost. Buy it and you will not be disappointed.
Zraly makes the fundamentals of wine easy to understand and fun to read. His writing is lively and entertaining and his worldwide knowledge of wine is astounding.
Windows on the World incorporated wine into dining in ways no other restaurant could match, and Zraly's expertise was the reason.
This book is essential for a budding wine connoisseur. It keeps things simple and introduces you to the wine regions of the world, grape varieties etc.
What a magnificent wealth of data on wine in this nicely laid out book.
Beginning with the planting, care and harvest of grapes, Zraly takes one through a catechism on wine. This question and answer format is followable, and presents it in a sequence that makes sense and one can take to the dining experience or wine store to utilize what one learns.
Like the section of food and wine matches and wine and cheese. Further, the "Wine Buying Strategies for Your Wine Cellar" is highly commendable and reliable.
This is great motivator to keep exploring this fascinating and always fluid enjoyment. The updated editions permit new tastings to grace the latest in the wine world.

TASTE—
To many people, tasting wine means taking a sip and swallowing immediately. This isn't tasting. Tasting is something you do with your taste buds. And remember, you have taste buds all over your mouth. They're on both sides of the tongue, underneath, on the tip, and they extend to the back of your throat. If you do what many people do, you take a gulp of wine and bypass all of those important taste buds.
What should you think about when tasting wine?
Be aware of the most important sensations of taste and where they occur on your tongue and in your mouth. As I mentioned earlier, you can only perceive four tastes: sweet, sour, bitter, and salt (but there's no salt in wine, so we're down to three). Bitterness in wine is usually created by high alcohol and high tannin. Sweetness only occurs in wines that have some residual sugar left over after fermentation. Sour (sometimes called "tart") indicates the acidity in wine.
Sweetness—Found on the tip of the tongue. If there is any sweetness in a wine whatsoever, you'll get it right away.
Fruit and Varietal Characteristics—Found in the middle of the tongue.
Acidity—Found at the sides of the tongue, the cheek area, and the back of the throat. It's most commonly present in white wines and some lighter-style red wines.
Tannin—The sensation of tannin begins in the middle of the tongue. Tannin frequently exists in red wines or wood-aged white wines. When the wines are too young, it dries the palate to excess. If there's a lot of tannin in the wine, the tannin can actually coat your whole mouth.
Aftertaste—This is the overall taste and balance of the components of the wine that lingers in your mouth. How long does the balance last? Usually a sign of a high-quality wine is a long, pleasing aftertaste. The taste of many of the great wines lasts anywhere from 1 minute to 3 minutes, with all of their components in harmony.
SAVOR—
After you've had a chance to taste the wine, sit back for a few moments and savor it. Think about what you just experienced and ask yourself the following questions to help focus your impressions. Was the wine:
Light, medium, or full-bodied? (Think: skim milk, whole milk, heavy cream.)
For a white wine: How was the acidity? Very little, just right, or too much?
For red wine: Is the tannin in the wine too strong or astringent? Is it pleasing?
Or is it missing?
How long did the balance of the components last? (10 seconds, 60 seconds, etc.)
To your taste, is the wine worth the price?
Is the wine ready to drink?
What is the strongest component (residual sugar, fruit, acid, tannin)?
What kind of food would you enjoy with the wine?
This brings us to the most important point. The first thing you should consider after you've tasted a wine is whether or not you like it. Is it your style?
You can compare tasting wine to browsing in an art gallery. You wander from room to room looking at the paintings. Your first impression tells whether you like one or not. Once you decide you like a piece of art, you want to know more: Who was the artist? What is the history behind the work? How was it done? And so it is with wine. Usually, once oenophiles discover a new wine that they like, they have to know all about it—the winemaker, the grapes, exactly where the crop was planted, the blend, if any, and the history behind the wine.

The definition of a good wine is one that you enjoy. Do not let others dictate taste to you!
When's a wine ready to drink?
This is one of the most frequently asked questions at the Windows on the
World Wine School. The answer is very simple—when all components of the wine are in balance to your particular taste.
THE 60-SECOND WINE EXPERT
Over the last few years I have insisted that my students spend at least one minute of silence after they swallow the wine. I use a "one-minute wine expert" tasting sheet in my classes for students to record their impressions—the minute is divided into four sections: 0-15 seconds, 15-30 seconds, 30-45 seconds, and the final 45-60 seconds. Try this with your glass of wine. I never rate the wine in the first 15 seconds as the first taste is a shock to the taste buds.

This book was worth it for the stories alone, but the recipes were an added plus. I would recommend this to anyone new and unused to making a pie from scratch.
If you show this book to people who borrow it and don't get it back for days or weeks, you may need more than one copy.
If you are someone who works well with their hands only when an alphanumeric keyboard is involved, making pie dough has always been an exercise in frustration and heartbreak. And cookbooks are for reading only when the time between cooking steps is too short to head back to my computer.
This book overcomes both challenges. It's a pleasure and a risk to read. The personal stories and anecdotes bring the author alive in your kitchen. Linger too long in a story though and you may forget to stir that lemon mixture before it hardens right there on your stove.
Pay attention, follow her clear directions and you will produce a very satisfactory pie. Obediently I focused on keeping everything cold, rolled correctly and my pie dough laid down in its pan beautifully. Pay attention to what she tells you about fats and flours - the difference in taste is remarkable.
This cookbook is for those who have tried and failed. You already know the basics, you just can't reproduce them in your kitchen. The author will renew your faith and hope that you too can produce a decent piecrust.
And a decent life too. Pie Everyday intertwines baking good food for any occasion with building a good life through any occasion. The author's stories vary like her pies - hearty, sweet, complex or couch-potato-simple. This is a book as much about life as it is about pie.

Crust Troubleshooters
There are a few things you can do to minimize problems—even on your worst day:
• Chill everything—flour and bowl included—for at least 30 minutes beforehand or keep a sack of flour in the refrigerator just for pies. For a quick chill, place the flour in the bowl and throw it in the freezer for 15 minutes.
• Measure flour and fat accurately.
• Use pans with dull surfaces, such as Silverstone, glass, or ceramic, so heat isn't reflected away from the pie during baking.
• If a crust cracks while you're rolling it out, too little water was added. It's best to start over from the very beginning, but if you must use it, carefully pick it up and lay it on a cutting board; cover with a damp towel and put it back in the refrigerator for 30 minutes. The dough will be a little moister, but the baked results will suffer slightly in terms of flakiness.
• If the bottom of an uncooked crust splits before it's filled, patch it by dampening a piece of leftover crust and pressing it gently over the hole.
• If a crust shrinks, you've stretched it out too much in the pan. Always drape the walls of the pan generously with the dough (even leave it a little wrinkly) and don't pull up on the crust to flute the edges. To stop a shell from shrinking when prebaking it, cook it with another pie pan inside for 8 minutes at 450°F. Remove the top pan and continue baking for another 7 minutes or until the crust is golden brown.
• If a crust fails to brown, either you used too little fat or too much liquid or, when you rolled it out, you used too much flour. Chalk the pale crust up to experience.

Reading through the recipes is also helpful for the beginner as tips abound from John and others who helped make the book possible. This is a book for people who love to cook outside, and love to cook beef and pork. Good chicken recipes and soups also. It may not be the best recipe book for vegetarians and side salad nuts, but for most meat-eating people, it's the greatest! Whether you listened to John as an announcer of football games or not, you will appreciate his good advice and candor on food.

The custom of tea drinking in China dates back to the legendary Shen Nung, who is said to have personally tried hundreds of grasses and herbs to test their medicinal effects and toxicity. Tea was a widely popular drink by the Sung Dynasty (960-1280 AD.), and gradually, innovations In the tea drinking custom were introduced. In addition to a high level of connoisseurship of the Various types of teas and improvements in the quality of tea leaves, a broad variety of accompaniments to tea drinking began to appear--;dim sum.
Among China’s provinces, “dim sum” and “tea drinking” are most closely interlinked in Kwangtung province, where dim sum and tea can comprise an entire meal. In the Cantonese yum cha (“tea drinking”) ritual, varieties of dim sum are served one after the other, along with one’s favorite tea, be it Oolong, Jasmine, Dragon Well, Iron Buddha, or green tea.
In China’s ancient agricultural society, people would often head for tea houses after an exhausting day in the fields. Here they would mix warm conversation with fine tea and a tantalizing selection of dim sum. The quantity of each was kept small--;the delicacies were served in tiers of bamboo steamers or small to medium-sized plates--;so that many different varieties could be sampled. This custom has continued up through the present day. Although people no longer while away entire days in tea houses, the leisurely tea drinking custom is still a frequent and favored activity.
In Taiwan, which boasts more than a few tea houses, yum cha is often a mid-morning brunch That takes care of both breakfast and lunch in one meal. Close friends and family are often invited along for a time to let down the usual weekday barriers and enjoy unrestrained conversation. Business people often like to strike deals over a relaxed mid-morning yum cha brunch.
A unique feature of Taiwan’s tea houses is that, in addition to the usual run of Cantonese-style Dim sum, you will find culinary specialties of Taiwan, Kiangsu and Chekiang provinces, the Peking and Tientsin areas, and other regions of China. This broadens the concept and experience Of dim sum, and provides a greater variety from which to choose.
The British are famous for their custom of “afternoon tea,” a time during which they push aside The pressing mailers of the day to relax and enjoy good tea or coffee and pastries, either alone Or with family and friends. The custom of coffee drinking has also gradually caught on in Taiwan, So that today, a plate of dim sum may just as well turn up next to a cup of Brazilian coffee as Chinese tea.

The Lobels' have introduced a very nice and unique cookbook with the release of this one. I own several other grilling cookbooks, and there are many good ones out there. This one is my absolute favorite because the recipes are a little more than your basic grilled steak or hamburger. Try the grilled filet mignon with gorgonzola-scallion compound butter and the sirloin steak with rosemary brushed potatoes and red peppers. Don't forget to try the barbeque sauce. The book's contents include tips on grilling, burgers, beef and veal, lamb and pork, poultry, game and game birds, and sauces, salsas, marinades, rubs and other condiments. There are no fish recipes so if you are looking for that specifically, find another cookbook. If everything else sounds good to you, you will enjoy this innovative book by the Lobels'.
This is a goldmine for explaining the intricacies of meat preparation. The book explains soup stock, stuffing and barbecuing. The author distinguishes between the caloric content, proteins and fats. This work explains how to pack meat. In fact, the author describes the meat-packing industry West of Chicago. The author demonstrates how various food elements are inter-related in the complex interaction of digestion. Meat provides important dietary amino acids and iron. This book is a good value for all meat connoisseurs.

It you are Irish, Scottish or Welsh, you will have firm ideas for celebrating your national occasions. If you are English, you may never have thought of marking your own or any other special day. However, if you are giving a party near one of these dates, and still more if you are entertaining someone from abroad, it is a pleasant idea to plan the party round such a theme.
You will of course include typical dishes, but you need not be pedantic. You can, for example, have a sweet that merely echoes the theme in colour and decoration—for Ireland, say, a lemon mousse decorated with angelica shamrocks and pistachio nuts.
Party Calendar
The table setting, flowers and so on can give added atmosphere: use little paper flags, the appropriate emblem, or a tablecloth or satin ribbons in the correct colours
Here are reminders for half a dozen countries. For other places, you can usually borrow books or consult the Embassy officials.
England—St. George’s Day, 23rd April.
Choose dishes based on home-produced foods. One of many possible menus might include Fried Dover Sole, Grilled Steak, Apple Tart and Cream, and Angels on Horseback.
Ireland—St. Patrick’s Day, 17th March.
The truly national dishes are typical of a agricultural country—good, well-flavoured food, simply presented. You won’t go wrong if you include bacon and potatoes in some form.
Scotland—St. Andrew’s Day, 30th November.
Scots are noted for cakes, scones, shortbread, etc., so a Scottish tea is easy. For a dinner, you could serve Barley Broth, Fried Herrings, and Haggis or Grouse.
Wales—St. David’s Day, 1st March.
Excellent farm produce, simply cooked, and local cakes and breads characterise the
Welsh lamb or salmon, with leeks used for a soup or vegetable. (Remember, the daffodil is the alternative national emblem.)
France—Bastille Day, 14th July
With the fleur-de-lys, Chanticleer, Marianne, the red revolutionary cap, the red- white-blue colours, there is no lack of symbols. Equally plentiful are French dishes. Whatever you choose, serve some French wine.
United States—Independence Day, 4th July.
Colours, red-white-blue; symbol, the eagle. Unofficially, a cowboy or hill-billy setting could be “typically American “. Food? Turkey, lemon meringue pie, ice cream. For Thanksgiving day (the fourth Thursday in November) turkeywith cranberry sauce and pumpkin pie are “musts”.
Seeing In The New Year
In Scotland, the first of January is regarded as a national holiday, and there, as in the North of England, it is widely celebrated. There are many old customs, such as that of “First Footing “, in which the first person to cross the doorstep on New Year’s Day is thought to determine the household’s fortunes for the coming year; to ensure good luck, he must be dark-haired, and should bring gifts of wine, ale or a lump of coal.
A great deal of visiting is done at this time, and it is therefore advisable to have a supply of refreshments ready to offer. Apart from whisky, a good punch is welcome to keep out the cold; by way of solid food, you can have either Scots Currant Bun, or a good Dundee Cake, both of which keep well. Athole Brose is also served on these occasions. Potato crisps and savoury biscuits are popular accompaniments for drinks.
Recipes from the book:
Scots Currant Bun
For the Pastry
10 oz. flour; a pinch of salt
5 oz. margarine and lard mixed
Cold water to mix (about 4 tbsps.)
Egg to glaze
For the Filling
lb. flour
1 tsp. cinnamon
1 tsp ginger
1 tsp. bicarbonate of soda
4 oz. brown sugar
1 lb. stoned raisins
1 lb. currants
4 oz. chopped peel
4 oz. chopped almonds
1 wineglassful whisky
Grease an 8-inch cake tin. Make the pastry in the usual way, and leave in a cool place. Mix together all the ingredients for the filling, moistening with the whisky, and adding a little milk if required. Line the cake tin with two-thirds of the pastry—see that it comes well up the sides, so that it may be folded over. Then fill with the fruit mixture, packing it well in. Fold over the sides of the pastry, and stick down the edges firmly. Roll out the remaining one-third, and place on top. Brush the top with beaten egg, then prick all over with a fork; using a plain 2-inch cutter, indent some overlapping circles over the top. Bake in a moderate oven (350 F., mark 4) for 2-3 hours.
Dundee Cake
4 lb. butter
4 lb. caster sugar
Grated rind of 1 lemon
4 eggs
4 lb. self-raising flour; salt
11 oz. currants
11 oz. sultanas
6 oz. chopped candied peel
5 oz. halved glacé cherries
2 oz. split blanched almonds
Milk to glaze
Line an 8—inch cake tin. Beat the butter, sugar and lemon rind thoroughly together, then beat in the eggs one at a time. Fold in sieved flour and a pinch of salt, with the fruit. Turn the mixture into the prepared tin, arrange the almonds on top, brush over with milk, and bake in a moderate oven (350° F., mark 3) for about 2 1/2 hours, reducing the heat to slow (325° F., mark 2) after 1 hour.
Athole Brose
Put 1 lb. clear honey into a basin, and blend it with just enough cold water to dissolve it. Gradually add 1 pint or more of whisky, beat till it becomes frothy, then serve.

It's been thirty years since the US Viking 2 spacecraft set down on the surface of Mars, analyzed the soil and climate and sent back some of the first close-up photographs of the planet. Landing at Utopia Planitia, the vehicle's cameras immediately began taking pic-tures. It continued its operations on Mars' surface until April 11, 1980, when the lander turned off because its batteries had died.
The Viking spacecraft sent back thousands of images, all in black and white. This book includes some color-enhanced photographs which are remarkably similar to those the more recent Spirit Lander.

Not long ago the idea of taking pictures of Mars from its surface was an idea located in-termediately between far out and preposterous. It changed from a dream to a concept about ten years ago with the advent of the Viking Program. As so often happens in the exploration of space, we were able to push back the boundaries of the practicable. In ret-rospect, with success under our belts, it even sounds simple: put cameras on spacecraft, land them on Mars, take pictures, send them back to Earth. Were it so!
In this book Tim Mutch, leader of the Viking Lander Imaging Team, takes you on a jour-ney spanning a decade. Suffer with him as he copes with innumerable meetings, argu-ments, alternate designs, budget problems, incipient failures, and, at times, sheer exhaus-tion. Enjoy with him amazement at how teamwork and dedication can manage the impos-sible. Other Pre-meds are doing whatever they can to get an advantage, do not fall behind. You need to do whatever you can to get every advantage you possibly can to achieve the highest score possible. This is the one part of your candidacy for medical school that is determined in a matter of a few months. Especially if you have a low GPA, this is your time to shine. I took the MCAT twice and I have to admit that this test is not like any other test you will take. It is its own thing, its own entity and the only way to descent is surround yourself with MCAT tests and material. Having all these tests will help raise your score guaranteed. I spent 2 months studying night and day with everything on the above list and it took my score from 28M to a 39P!!

I have a descent GPA but never felt I had a good understanding of the material when taking the courses. The only material I used is on this list and this helped take my initial score of a 26 to a 39. Recipe from book:
Stuffed Green Peppers (Yung Lot Tzu)
6 green peppers (lot tzu)
1 pound fish fillet
1 teaspoon salt
½ teaspoon pepper
2 cups water
1 tablespoon oil
1 teaspoon sherry
1 teaspoon soy sauce
1 teaspoon monosodium glutamate
½ teaspoon sugar
1½ teaspoons cornstarch mixed with 3 tablespoons water
Cut green peppers in half and clean the inside. Mince fish very finely. Mix 3,4 teaspoon salt, pepper and 1/2 cup water. Add one half of this mixture to fish and stir for 5 minutes. Add the other half and stir for 5 minutes more. The longer you stir the better it is. Add oil and stir. Stuff the green peppers with this mixture (yung). Using a high flame, heat a well-greased frying pan and fry the peppers on the open side until brown. Add 1½ cups water. Cover and cook for 4 minutes. Remove peppers and set aside. Add sherry, soy sauce, monosodium glutamate, sugar, ¼ teaspoon salt and cornstarch paste. Stir and cook for 1 minute. Pour over the peppers.

Laotian Beef Lap
1 heaping tablespoon raw rice
3 fresh green chilies, chopped
3 small dried red chilies fine
2½ cups water
1 large green pepper, seeded
1 pound ground round or ground chopped sirloin
¼ cup mint leaves (about 80)
1 teaspoon dried lemon grass
3 tablespoons lemon juice or 1 teaspoon grated lemon rind
Nam pla or salt to taste
1 large yellow onion, chopped very fine
Roast the rice in a dry frying pan over a medium flame until it is a pale gold color. Transfer it to a mortar and pound it to the consistency of corn meal. Roast the dry chilies in the same way and pound them in the mortar.
Bring the water to a boil and add the lemon grass and the beef, stirring until the meat changes color. Drain the meat and place in a serving dish with the rice, dried chilies, onions, fresh chilies, green pepper, and the mint leaves (reserving some of the mint for garnish). Sprinkle the lemon juice over all and mix to blend well. Finally add salt or nam pla to taste and garnish with the remaining mint leaves. Serve with plain boiled rice.

This is an extremely cool little cookbook not only for the recipes but for the look of it. It is printed on what appears to be brown rice paper, which gives it a wonderful feel as well as a great look. There are black ink illustrations and the recipes are printed in red ink - quite a different look for a cookbook.
What about the recipes?" The answer is they are great if you're into Japanese cooking. There are Japanese meatballs (niku dango) that would be very easy to put together from what you have in your kitchen. There is eel bowl (unagi donburi) which you probably don't have all the ingredients on hand. There is also a wide range of recipes that span the simple to the much more complex and unusual ingredients.
The recipes are clear and concise, explaining how to accomplish the recipe. There's an introduction, explaining various aspects of Japanese cooking and assuring the reader that you don't have to be The Iron Chef to cook tasty Japanese foods. You may have to look around to find the right ingredients and spices for some of these recipes.
It's the only Japanese cookbook I've found useful. The recipes are easy to make and come out surprisingly well using only the simplest ingredients and techniques. For the most part it's organized very well, vegetable recipes in one section, seafood in another. The textured paper makes the book more interesting
If you are interested in exploring Japanese cooking but intimidated by what you are used to seeing in Japanese restaurants, this is where you should start. Most recipes are incredi-bly simple to prepare and don't require excessive or hard-to-find ingredients. With a few simple tools and a quick trip to an Asian grocer, you'll be wowing friends and family with delicious new meals.

Seasoned Nori
2 sheets dry nori about 8”x8”
Salty water
Sprinkle nori with saltwater slightly, put in medium oven for 4-5 minutes to dry. Remove, let dry completely until crisp. Cut each sheet into eighths (2”x4”). Use in many recipes or as snack.
